PARTIAL DRYING
Assisted, 15-20 days
NOTES ON THE PRODUCTION PROCESS
The grapes are placed in dehumidified rooms where they undergo assisted drying. After they are cooled and pressed, the must starts a slow fermentation that brings out the aromatic elements.
Winter’s heavy snow and rain left an abundant water supply, while spring brought a succession of fine, sunny days, and summer defied the meteorologists with its fairly moderate temperatures. This meant that the grapes did not ripen too early and harvesting began at the beginning of September. Chardonnay, which is always the first variety to be harvested at Brolio, was gathered between 4 and 7 September.
The golden-yellow colour is the prelude to a bouquet of wild rose, banana and ripe apricot, while the palate reveals wonderful softness and an aromatic element supported by round, velvety richness of texture.
