NOTES ON THE PRODUCTION PROCESS
The grapes are placed in dehumidified rooms where they undergo assisted drying. After they are cooled and pressed, the must starts a slow fermentation that brings out the aromatic elements.
2007 will go down in records as the hottest year in the last two centuries: both winter and spring registered temperatures much higher than the average. At Brolio, they failed to fall below zero during the winter, and rainfall was also very limited. This trend meant that vegetal growth started around 20 days early, but a cooler than average summer allayed the risk of heat stress, allowing the grapes to ripen to perfection and attain a perfect level of maturation.
Chardonnay, and a small percentage of other varieties One of the best ever vintages for this wine. Golden yellow in colour, it is young, very fresh-tasting, fragrant and tempting with elegant appeal. The nose displays aromas of tropical and candied fruit, while the palate reveals faint hints of honey, pineapple, pink grapefruit, lime and delicate nuances of apricot that give an impression of velvety softness.
