Ricasoli Metodo Classico is a vintage sparkling wine created from a careful selection of 100% Chardonnay grapes sourced exclusively from the Brolio vineyards.
The purity of the grape variety, along with the expression of a specific vintage, is enhanced by the extended aging on lees and the choice of zero dosage.
The Chardonnay grapes for the Metodo Classico were harvested shortly after mid-August to preserve the acidity and freshness essential for sparkling wine production. The harvest was carried out entirely by hand, and the picking took place in the early hours of the day to ensure the best quality.
Upon arrival at the winery, the grapes were gently pressed, followed by fermentation in temperature-controlled stainless steel tanks. The sparkling wine base remained in contact with its fine lees until the tirage (the process of bottling with added sugar and yeast) in April 2021. This critical stage helps preserve the characteristics of the grape variety, enhance its aromatic complexity, and provide the wine with a creamy texture and fullness. After bottling and the addition of the liqueur de tirage, the second fermentation took place, followed by 36 months of aging on the lees.
Disgorgement occurred in April 2024, during which the bottles were refilled with the same wine – with no added dosage.
After a mild, dry winter, spring brought average seasonal temperatures with minimal rainfall. The fruit set occurred at the usual time, benefiting from a dry and breezy climate. Summer was hot and sunny, with only rare rainfall. Harvest took place in the second half of August, under ideal weather conditions, with cooler temperatures at night, ensuring excellent ripeness and a distinctive aromatic profile in the grapes.
